Tangy Pineapple and Vegetable Skewers

  • 2 tablespoons roasted peanuts
  • few fenugreek leaves
  • 1 teaspoon lemon juice
  • 1/4 teaspoon turmeric powder
  • 1/2 teaspoon coriander powder
  • 1/4 teaspoon jaggery powder
  • 1/4 teaspoon black pepper powder
  • 1/2 teaspoon rock salt
  • 2 tablespoons water


  • 12 small pineapple squares
  • 12 small red bell pepper squares
  • 12 small green capsicum squares
  • 12 small sweet potato squares, steamed (all squares should be 1/2 – inch in length)

  1. Place all the coating ingredients into a blender and blend until smooth. Transfer into a medium – sized mixing bowl.
  2. Add all the squares into the same bowl, and stir well until they are coated evenly.
  3. Poke the coated squares onto skewers or toothpicks. Set them aside and let them marinate for 10 minutes.
  4. Heat a cast iron tawa on medium flame. Place the skewers in it, and cover with a large lid to soften the vegetables.
  5. Cook on a medium flame for 8 minutes. Every 2 – 3 minutes, lift the lid and flip the skewers until golden brown on all sides.
  6. Serve warm with green chutney.
