Coconut Coriander Ginger Chutney

Ingredients (Makes 21/4 CUPS)

  • 1 1/2 cups chopped coconut
  • 1/4 cup chopped coriander
  • 3/4 cup water
  • 1 inch ginger, chopped
  • 1/4 green chili, chopped
  • 1 tablespoon tamarind pulp
  • 1 teaspoon rock salt
  • 1/2 teaspoon jaggery powder
  • 8 curry leaves
  • 1/2 teaspoon black mustard seeds

Method

  1. Blend all the ingredients, except the curry leaves and mustard seeds, until smooth, then transfer to a bowl.
  2. Heat a tawa, and roast the curry leaves and mustard seeds.
  3. Place the roasted ingredients on top of the chutney.
  4. Serve immediately, or store in the refrigerator for 2-3 days.
