Golden Roasted Baby Corn Delight with Green Chutney

Ingredients
10 Whole Baby Corns
Coating
2 tablespoons white sesame seeds
1 tablespoon peanuts, soaked
1 tablespoon lemon juice
2 teaspoons coriander powder
1 tablespoons roasted cumin powder
1/2 kasuri methi
1/2 teaspoon mustard seeds
1/4 teaspoon black pepper powder
1/4 teaspoon tumeric powder
1/2 teaspoon chopped green chili
1/8 teaspoon asafoetida
1 teaspoon rock salt
1/4 teaspoon black salt
3 tablespoons water

Soak in Advance
Soak 1 tablespoon of peanuts for 6 hours,
Method
- Place all the coating ingredients into a blender and blend until smooth. Transfer to a large mixing bowl.
- Add the whole baby corns into the same bowl, and stir well until the baby corns are evenly coated. Let them marinate for 15 mins.
- Heat a cast iron tawa on a medium flame. Place the coated baby corns on it, and cover with a large lid.
- Roast on a medium flame for 10 minutes. Every 2-3 minutes, lift the lid and flip the baby corns. Roast until golden brown.
- Serve warm with green chutney.
Tip: You can also place the marinated baby corn into a preheated oven, and bake at 220C for 15 minutes.
