Creamy Malai Broccoli Delight

Ingredients

6 cups water

5 cups broccoli florets (2 medium sized broccoli)

Malai

1/2 cup cashews, soaked

2 tablespoons melon seeds, soaked

1/2 teaspoon chopped green chili

1/2 teaspoon chopped ginger

1/4 teaspoon cardamom powder

few fenugreek leaves

1 teaspoon rock salt

1/3 cup water

Topping

2 tablespoons chopped coriander

2 teaspoons lemon juice

Soak in advance

Soak 1/2 cup of cashews and 2 tablespoons of melon seeds for 6 hours.

Method

  1. Heat a saucepan and add the water. Let it come to a boil, then add the broccoli. Cover with a lid and boil for 5 minutes on medium flame.
  2. Preheat the oven to 220C for 10 minutes.
  3. Once it has boiled, soak the broccoli in cold water for 10 minutes, in order to retain its colour.
  4. Blend together all the malai ingredients until creamy. Transfer into a large mixing bowl.
  5. Separate 2 tablespoons of the blended malai into another small bowl to be used later.
  6. Strain the water from the broccoli. Combine the broccoli with the blended malai, and massage until it is coated. Let it marianate for 10 minutes.
  7. Place the marinated broccoli into the preheated oven, and bake at 220C for 15 minutes.
  8. Place the baked broccoli on a plate, and drizzle with the remaining malai. Top with coriander and lemon juice, and serve with green chutney.
