Creamy Malai Broccoli Delight

Ingredients
6 cups water
5 cups broccoli florets (2 medium sized broccoli)
Malai
1/2 cup cashews, soaked
2 tablespoons melon seeds, soaked
1/2 teaspoon chopped green chili
1/2 teaspoon chopped ginger
1/4 teaspoon cardamom powder
few fenugreek leaves
1 teaspoon rock salt
1/3 cup water
Topping
2 tablespoons chopped coriander
2 teaspoons lemon juice

Soak in advance
Soak 1/2 cup of cashews and 2 tablespoons of melon seeds for 6 hours.
Method
- Heat a saucepan and add the water. Let it come to a boil, then add the broccoli. Cover with a lid and boil for 5 minutes on medium flame.
- Preheat the oven to 220C for 10 minutes.
- Once it has boiled, soak the broccoli in cold water for 10 minutes, in order to retain its colour.
- Blend together all the malai ingredients until creamy. Transfer into a large mixing bowl.
- Separate 2 tablespoons of the blended malai into another small bowl to be used later.
- Strain the water from the broccoli. Combine the broccoli with the blended malai, and massage until it is coated. Let it marianate for 10 minutes.
- Place the marinated broccoli into the preheated oven, and bake at 220C for 15 minutes.
- Place the baked broccoli on a plate, and drizzle with the remaining malai. Top with coriander and lemon juice, and serve with green chutney.
