Spiced Garden Medley
Ingredients:
- 1.5 cups Cauliflower (cut into small florets)
- 1 big Potato (cut into long thin slices)
- 1/2 cup Carrot (cut into long thin slices)
- 1/2 cup French beans (sliced)
- 1/2 cup Capsicum (sliced)
- 1/2 cup Green Peas
- 1 large Onion (finely chopped)
- 1 tbsp Garlic (finely chopped)
- 2 Green chillis (finely chopped)
- 2 tbsp Coriander (chopped)
- 1/2 tsp Turmeric powder/ Haldi
- 1/2 tsp Garam Masala
- 1/2 tsp Coriander powder
- 1/2 tbsp Cumin seeds/ Jeera
- 1/2 tbsp Mustard seeds/ Rai
- 1 tsp Asafoetida/ Hing
- 4 tbsp Oil
- Salt to taste
Instructions:
- Prepare the Vegetables:
- Wash and chop all the vegetables as per the instructions.
- Keep them aside.
- Cooking Process:
- Heat oil in a pan over medium heat.
- Add cumin seeds and mustard seeds. Let them splutter.
- Add finely chopped garlic and green chilies. Sauté for a minute until fragrant.
- Add chopped onions and sauté until they turn translucent.
- Adding Vegetables:
- Add all the chopped vegetables (cauliflower, potato, carrot, French beans, capsicum, and green peas) to the pan.
- Sprinkle turmeric powder, coriander powder, garam masala, and salt. Mix well to coat the vegetables with the spices.
- Cover the pan and cook on medium heat for about 15-20 minutes or until the vegetables are tender, stirring occasionally.
- Finishing Touch:
- Once the vegetables are cooked through, remove the lid and let any excess moisture evaporate.
- Sprinkle chopped coriander leaves and mix well.
- Cook for another 2-3 minutes until the sabzi is dry and aromatic.
- Serving:
- Transfer the mix vegetable dry sabzi to a serving dish.
- Garnish with additional chopped coriander leaves if desired.
- Serve hot with roti, paratha, or rice.
