Spiced Garden Medley

Ingredients:

  • 1.5 cups Cauliflower (cut into small florets)
  • 1 big Potato (cut into long thin slices)
  • 1/2 cup Carrot (cut into long thin slices)
  • 1/2 cup French beans (sliced)
  • 1/2 cup Capsicum (sliced)
  • 1/2 cup Green Peas
  • 1 large Onion (finely chopped)
  • 1 tbsp Garlic (finely chopped)
  • 2 Green chillis (finely chopped)
  • 2 tbsp Coriander (chopped)
  • 1/2 tsp Turmeric powder/ Haldi
  • 1/2 tsp Garam Masala
  • 1/2 tsp Coriander powder
  • 1/2 tbsp Cumin seeds/ Jeera
  • 1/2 tbsp Mustard seeds/ Rai
  • 1 tsp Asafoetida/ Hing
  • 4 tbsp Oil
  • Salt to taste

Instructions:

  1. Prepare the Vegetables:
    • Wash and chop all the vegetables as per the instructions.
    • Keep them aside.
  2. Cooking Process:
    • Heat oil in a pan over medium heat.
    • Add cumin seeds and mustard seeds. Let them splutter.
    • Add finely chopped garlic and green chilies. Sauté for a minute until fragrant.
    • Add chopped onions and sauté until they turn translucent.
  3. Adding Vegetables:
    • Add all the chopped vegetables (cauliflower, potato, carrot, French beans, capsicum, and green peas) to the pan.
    • Sprinkle turmeric powder, coriander powder, garam masala, and salt. Mix well to coat the vegetables with the spices.
    • Cover the pan and cook on medium heat for about 15-20 minutes or until the vegetables are tender, stirring occasionally.
  4. Finishing Touch:
    • Once the vegetables are cooked through, remove the lid and let any excess moisture evaporate.
    • Sprinkle chopped coriander leaves and mix well.
    • Cook for another 2-3 minutes until the sabzi is dry and aromatic.
  5. Serving:
    • Transfer the mix vegetable dry sabzi to a serving dish.
    • Garnish with additional chopped coriander leaves if desired.
    • Serve hot with roti, paratha, or rice.
