Chia-Coconut Bliss Ladoos

Ingredients:

  • 1/4 cup chia seeds
  • 1 cup water
  • 5 Tbsp jaggery (or to taste)
  • 1 1/2 cup grated coconut
  • 1 tsp cardamom powder
  • 3 Tbsp hemp hearts or ground almonds (optional)
  • Pinch of saffron
  • 1 Tbsp ghee

Instructions:

  1. Soak Chia Seeds:
    • In a bowl, soak chia seeds in water for at least 30 minutes. This allows them to absorb water and expand.
  2. Prepare Ingredients:
    • Grate the coconut if not already grated.
    • Measure out the jaggery, cardamom powder, and other optional ingredients like hemp hearts or ground almonds.
  3. Roast Coconut Mixture:
    • In a pan, heat ghee over medium heat.
    • Add grated coconut, jaggery, cardamom powder, and saffron to the pan.
    • Stir continuously to ensure even cooking and to prevent burning.
    • Cook until the mixture thickens and the moisture evaporates, approximately 6 minutes.
  4. Add Chia Seeds and Optional Ingredients:
    • Once the coconut mixture is ready, add the soaked chia seeds and hemp hearts or ground almonds (if using) to the pan.
    • Stir well to combine all the ingredients.
  5. Cook Further:
    • Continue cooking the mixture while stirring continuously for another 6 minutes or until all the excess moisture evaporates and the mixture becomes thick.
  6. Cool and Shape:
    • Transfer the mixture to a plate or tray and allow it to cool down slightly.
    • While the mixture is still warm but manageable, shape it into small round ladoos using your hands.
  7. Storage:
    • Once shaped, store the ladoos in an airtight container.
    • They can be stored at room temperature for up to a week.
