Besan-Coated Cluster Beans Stir-Fry
Ingredients:
- 1 tablespoon Besan (gram flour)
- ¼ teaspoon Turmeric powder
- 1 teaspoon Coriander powder
- ½ teaspoon Cumin powder
- 1 ½ cups Gawar or cluster beans, cut into 1-inch pieces
- 2 tablespoons Oil
- ¼ teaspoon Ajwain (Carom seeds)
- 1 Green chili, chopped finely
- 2 cloves Garlic, chopped finely
- Salt to taste
- ½ teaspoon Lemon juice
- ½ teaspoon Garam masala
Instructions:
- Rinse the cluster beans in a colander under running water, massaging them lightly to remove any dirt. Drain the excess water.
- Remove the head and tail parts of the cluster beans. If you find any strings, remove and discard them. Then cut the beans into 1-inch pieces.
- Prepare a steamer by adding water to a saucepan. Place a steamer pan over it and cover with a lid. Let the water come to a simmer. Once simmering, add the chopped cluster beans and cover with a lid. Steam for 5-8 minutes or until the beans are soft and tender. Remove from the steamer and set aside.
- While the beans are steaming, prepare the besan-spice mixture. In a small bowl, mix besan, turmeric powder, coriander powder, and cumin powder. Keep it ready.
- Heat oil in a pan or kadai over medium heat. Once hot, add ajwain and let them sizzle for a few seconds. Add chopped garlic and green chili. Sauté for 30-40 seconds or until the raw smell of garlic disappears.
- Quickly add the besan-spice mixture. Immediately mix and cook, stirring constantly for 1-2 minutes.
- Add the steamed cluster beans and salt. Mix well and cook for 2 minutes.
- Lastly, add garam masala and lemon juice. Mix well. Turn off the heat.
- Serve hot as a side dish with roti or rice.
