Besan-Coated Cluster Beans Stir-Fry


  • 1 tablespoon Besan (gram flour)
  • ¼ teaspoon Turmeric powder
  • 1 teaspoon Coriander powder
  • ½ teaspoon Cumin powder
  • 1 ½ cups Gawar or cluster beans, cut into 1-inch pieces
  • 2 tablespoons Oil
  • ¼ teaspoon Ajwain (Carom seeds)
  • 1 Green chili, chopped finely
  • 2 cloves Garlic, chopped finely
  • Salt to taste
  • ½ teaspoon Lemon juice
  • ½ teaspoon Garam masala


  1. Rinse the cluster beans in a colander under running water, massaging them lightly to remove any dirt. Drain the excess water.
  2. Remove the head and tail parts of the cluster beans. If you find any strings, remove and discard them. Then cut the beans into 1-inch pieces.
  3. Prepare a steamer by adding water to a saucepan. Place a steamer pan over it and cover with a lid. Let the water come to a simmer. Once simmering, add the chopped cluster beans and cover with a lid. Steam for 5-8 minutes or until the beans are soft and tender. Remove from the steamer and set aside.
  4. While the beans are steaming, prepare the besan-spice mixture. In a small bowl, mix besan, turmeric powder, coriander powder, and cumin powder. Keep it ready.
  5. Heat oil in a pan or kadai over medium heat. Once hot, add ajwain and let them sizzle for a few seconds. Add chopped garlic and green chili. Sauté for 30-40 seconds or until the raw smell of garlic disappears.
  6. Quickly add the besan-spice mixture. Immediately mix and cook, stirring constantly for 1-2 minutes.
  7. Add the steamed cluster beans and salt. Mix well and cook for 2 minutes.
  8. Lastly, add garam masala and lemon juice. Mix well. Turn off the heat.
  9. Serve hot as a side dish with roti or rice.
