INGREDIENTS
Lemon Rice
• ¾ teaspoon mustard seeds
• 16 curry leaves
• 1 cup raw brown rice, soaked
• ½ teaspoon turmeric powder
• 4 cups water
• 1½ tablespoons lemon juice
• ¾ teaspoon rock salt
PREPARATION
Soak 1 cup of brown rice for 6 hours.
METHOD
1. Heat a pot, add mustard seeds and curry leaves, and roast for 2 minutes on medium flame.
2. Add the soaked brown rice, turmeric and water. Stir, cover, and let it cook for 30 minutes until soft.
3. Switch off the stove and add lemon juice and salt. Mix well and serve with coconut stew.
