INGREDIENTS

•  2 tablespoons brown rice, soaked
•  ⅓ cup water
•  1 cup almond milk
•  ⅓ cup jaggery powder
•  ½ teaspoon cardamom powder
•  1 teaspoon rose water
•  20 saffron strands, soaked

Toppings

•  2 tablespoons almonds, roasted and chopped
•  A few saffron strands
•  1 teaspoon rose petals (optional)

PREPARATION

•  Prepare 1 cup almond milk.

•  Soak 2 tablespoons brown rice for 1 hour.
•  Soak 20 saffron strands in 2 tablespoons hot water for 1 hour.

Method

1. Place 3 tablespoons of water and soaked brown rice into a blender and blend until brown rice is blended properly.
2. Add water to a clay pot and bring it to a boil. Add blended brown rice and keep stirring till the paste becomes a little thick. Add almond milk and let it cook for 5 minutes on low flame.
3. Add jaggery powder and cardamom powder and let it cook until the mixture becomes thick. Keep stirring it continuously.
4. Switch off the stove and let it cool for 10 minutes. Add rose water, soaked saffron, and the water in which saffron was soaked and mix.
5. Place this mixture in the blender and pulse to get a smooth paste. Do not over-blend it. Place it in a refrigerator for at least 30 minutes.
6. Top it up with almonds, saffron strands, rose petals and serve.
