Ingredients
Kulcha
- 1 cup whole wheat flour
- 1 1/2 teaspoons jaggery powder
- 1/2 teaspoon baking soda
- 1/8 teaspoon rock salt
- 1/2 cup warm water
Topping
- 2 tablespoons chopped coriander
- 1 teaspoon roasted jakhiya seeds or black sesame seeds
Method
- Combine all the kulcha ingredients, except the warm water, in a large mixing bowl. Stir well.
- Add the warm water, and knead the dough. Cover the bowl with a wet cloth, and let it rest for 20 minutes.
- Divide the dough into 5 balls. Dust a rolling board with some flour, and flatten each ball.
- Sprinkle some coriander and jakhiya seeds on top, then roll each ball into a 4.5-inch circle with a rolling pin (belan).
- Heat a tawa, and cook each kulcha on a low to medium flame until golden spots appear.
- Serve warm with mattra, or any other sabzi.
