Coconut Ajwain Chutney
Ingredients (Makes 1/2 cup)
- 1/2 cup thickly grated coconut
- pinch of roasted carom seeds (ajwain)
- 1 teaspoon jaggery powder
- 1/2 teaspoon tamarind pulp
- 1/4 teaspoon chopped green chili
- 1/2 teaspoon rock salt
- 1/3 cup water
- 1 tablespoon rock salt
- 1/3 cup water
- 1 tablespoon curry leaves
- 1/4 teaspoon mustard seeds
Method
- Blend all ingredients, except the curry leaves and mustard seeds, until smooth, then transfer to a bowl.
- Heat a tawa and roast the curry leaves and mustard seeds.
- Place the roasted ingredients on top of the chutney.
- Serve immediately, or store in the refrigerator for 2-3 days.
