Coconut Ajwain Chutney

Ingredients (Makes 1/2 cup)

  • 1/2 cup thickly grated coconut
  • pinch of roasted carom seeds (ajwain)
  • 1 teaspoon jaggery powder
  • 1/2 teaspoon tamarind pulp
  • 1/4 teaspoon chopped green chili
  • 1/2 teaspoon rock salt
  • 1/3 cup water
  • 1 tablespoon rock salt
  • 1/3 cup water
  • 1 tablespoon curry leaves
  • 1/4 teaspoon mustard seeds

Method

  1. Blend all ingredients, except the curry leaves and mustard seeds, until smooth, then transfer to a bowl.
  2. Heat a tawa and roast the curry leaves and mustard seeds.
  3. Place the roasted ingredients on top of the chutney.
  4. Serve immediately, or store in the refrigerator for 2-3 days.
