Zen Vegan Sushi Rolls with Avocado, Cucumber, and Carrot


For the Sushi Rice:

  • 1 cup sushi rice
  • 1 1/4 cups water
  • 2 tablespoons rice vinegar
  • 1 tablespoon sugar / honey
  • 1/2 teaspoon salt

For the Sushi Rolls:

  • 4 nori seaweed sheets
  • 1 ripe avocado, thinly sliced
  • 1/2 English cucumber, julienned
  • 1 carrot, julienned
  • Pickled ginger and soy sauce, for serving


  1. Rinse the sushi rice under cold water until the water runs clear. In a rice cooker or pot, combine the rice and water and cook according to the package instructions.
  2. While the rice is cooking, prepare the sushi vinegar by combining the rice vinegar, sugar, and salt in a small saucepan over low heat. Stir until the sugar and salt are dissolved. Remove from heat and let it cool.
  3. Once the rice is cooked, transfer it to a large bowl and gently fold in the sushi vinegar mixture until well combined. Let the rice cool to room temperature.
  4. Place a nori seaweed sheet shiny side down on a bamboo sushi mat or clean kitchen towel.
  5. With wet hands, spread about 1/2 cup of sushi rice evenly over the nori sheet, leaving a 1-inch border at the top.
  6. Arrange a few slices of avocado, cucumber, and carrot horizontally across the center of the rice.
  7. Using the bamboo mat or towel, tightly roll the sushi away from you, pressing gently to seal the edge. Wet the top border of the nori sheet with a little water to help seal the roll.
  8. Repeat with the remaining nori sheets and filling ingredients.
  9. Using a sharp knife, slice each sushi roll into 6-8 pieces.
  10. Serve the vegan sushi rolls with soy sauce for dipping and pickled ginger on the side.
