Tofu and Broccoli Power Bowl

Ingredients:

For the Baked Tofu:

  • 1 block (about 14 oz) firm tofu, pressed and cubed
  • 2 tablespoons soy sauce or tamari
  • 1 tablespoon olive oil
  • 1 tablespoon maple syrup
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt and black pepper to taste

  • 1 large head of broccoli, cut into florets

For the Brown Rice:

  • 1 cup brown rice
  • 2 cups water or vegetable broth

Instructions:

  1. Prepare the Brown Rice:
    • In a medium saucepan, bring the water or vegetable broth to a boil.
    • Add the brown rice and a pinch of salt.
    • Reduce the heat to low, cover, and simmer for about 40-45 minutes, or until the rice is tender and the liquid is absorbed.
