Ingredients:
– 1 cup sprouted moong dal
– 1/2 cup rice flour
– 1/4 teaspoon salt
– 1/4 teaspoon baking soda
– 1 tablespoon lemon juice
– 1 tablespoon olive oil
– Water, as needed
– Chopped onions, carrots, and coriander leaves for garnish (optional)
Instructions:
1. Rinse the sprouted moong dal and drain well.
2. In a blender or food processor, blend the sprouted moong dal into a smooth paste.
3. In a large bowl, mix together the blended moong dal, rice flour, salt, and baking soda.
4. Gradually add water to the bowl and mix until a smooth batter forms.
5. Add lemon juice and olive oil to the batter and mix well.
6. Let the batter rest for 30 minutes.
7. Heat a non-stick pan or griddle over medium heat.
8. Pour a ladle of the batter onto the pan and spread it evenly.
9. Cook for 2-3 minutes or until the edges start to curl.
10. Flip the pancake and cook for another minute.
