Savory Sabudana Delight

Servings – 4

INGREDIENTS

Sabudana – 80 grams

Water – 500 milliliters

Desi ghee – 1 teaspoon

Peanuts – 2 tablespoons

Desi ghee – 2 teaspoons

Cumin seeds – 1/2 teaspoon

Ginger – 1 teaspoon

Green chili – 1 teaspoon

Potatoes – 60 grams

Salt – 1 teaspoon

Water – 700 milliliters

Black pepper – 1/2 teaspoon

Coriander – 1 tablespoon

Lemon juice – 1 tablespoon

Coriander – for garnishing

PREPARATION

1. In a bowl, add 80 grams sabudana, 500 milliliters water and soak for 2 – 3 hours.

2. Heat 1 teaspoon desi ghee in a pan, add 2 tablespoons peanuts and roast for 2 – 3 minutes on medium heat.

3. Remove it from heat and keep aside.

4. Heat 2 teaspoons desi ghee in a heavy skillet, add 1/2 teaspoon cumin seeds and stir well.

5. Add 1 teaspoon ginger, 1 teaspoon green chili and stir for a minute.

6. Then, add 60 grams potatoes and mix it well.

7. Cover it with lid and cook for about 2 – 3 minutes on medium heat.

8. Open the lid and give it a nice stir.

9. Now, add the soaked sabudana, 1 teaspoon salt and mix it well.

10. Add 700 milliliters water and mix it well.

11. Again cover it with lid and cook for about 10 – 12 minutes on medium heat.

12. Open the lid and give it a nice stir.

13. Add 1/2 teaspoon black pepper, 1 tablespoon coriander, roasted peanuts, 1 tablespoon lemon juice and mix it well.

14. Cook for 2 – 3 minutes on medium heat and remove it from heat.

15. Garnish with coriander.

16. Serve hot.
