Healing Zucchini Delight Soup

Ingredients (Serves 2):

  • 2 medium zucchinis, chopped

  • 1 small onion, chopped

  • 2 cloves garlic, minced

  • 1 tsp cold-pressed coconut oil or olive oil

  • 1.5 cups water

  • 1 tbsp soaked cashews (for creaminess, optional)

  • 1/4 tsp black pepper

  • Himalayan pink salt to taste

  • 5-6 fresh basil or coriander leaves (optional)


Instructions:

  1. Heat oil in a pan. Sauté onion and garlic for 2–3 minutes until soft.

  2. Add zucchini and cook for 3–4 minutes until slightly tender.

  3. Add 1.5 cups water, cover, and cook for 8–10 minutes until zucchini is soft.

  4. Let it cool slightly. Blend with soaked cashews, basil, salt, and pepper until smooth.

  5. Return to the pan and heat for 1–2 minutes. Serve warm.
