Golden Moringa Delight Curry
Here’s a step-by-step guide to preparing Moringa Leaves Curry:
Ingredients:
- Moringa Leaves: 50g
For Grinding:
- Grated Coconut: 200g
- Turmeric Powder: 5g
- Salt: 1 tsp or as needed
- Garlic Cloves: 2
- Madras Onions: 4 small
- Cumin Seeds: 20g
- Water: 200ml
For Tempering:
- Coconut Oil: 30g
- Mustard Seeds: 5g
- Broken Whole Red Chilies: 5 pieces
- Sliced Madras Onions: 20g
- Curry Leaves: 2 sprigs
Instructions:
- Prepare the Moringa Leaves:
- Rinse the Moringa leaves thoroughly and drain excess water. Set aside.
- Grind the Masala:
- In a blender or food processor, add grated coconut, turmeric powder, salt, garlic cloves, Madras onions, cumin seeds, and water.
- Grind the ingredients into a fine, smooth paste. Set aside.
- Temper the Ingredients:
- Heat coconut oil in a pan over medium heat.
- Add mustard seeds and allow them to splutter.
- Then, add broken whole red chilies, sliced Madras onions, and curry leaves. Sauté until the onions turn golden brown.
- Cooking the Curry:
- Add the prepared Moringa leaves to the pan. Sauté for a couple of minutes until they are slightly wilted.
- Once the Moringa leaves are sautéed, add the ground masala paste to the pan. Sauté for a few more minutes to reduce the strong flavors of the onion and garlic.
- Pour 500ml of water into the pan and mix well. Allow the curry to simmer for about 5 minutes, allowing the flavors to meld together.
- Serving:
- Once the curry is cooked and has reached the desired consistency, remove it from heat.
- Serve hot with rice, dosa, idli, or appam.
