Vegetable Cumin Bulgur Wheat & Cabbage Wraps


100g Bulgar wheat
1 tomato
1/2 onion or 1 stick celery
3 mushrooms
2 florets broccoli
1 vegetable stock cube
1/4 red pepper
1/2 tsp turmeric
1/2 tsp mixed spice
1/2 tsp cumin
1/2 tsp black pepper
1 tbsp agave nectar


Time: 10 minutes

Calories: 450

Cover the bulgar wheat with boiling water in a saucepan and
bring to a boil on the hob. Chop the vegetables and add them into the
saucepan. Simmer for 6-10 minutes in total – until the bulgar
wheat has softened and expanded. Rinse and drain, and add back to
the saucepan and over the heat. Crumble the stock cube and add
along with the spices and the agave to the saucepan. Mix well.
Serve with say cabbage leaf wraps.

Bulgur wheat is wheat free, has a nutty taste, and cooks much
faster than brown rice. Packed full of minerals, this meal is very
satisfying and great to have a few hours before exercise or work.
