Spiced Ridge Gourd Relish with Coconut Elegance

Ingredients (MAKES 1 CUP)

  • 1/2 teaspoon mustard seeds
  • 1/2 teaspoon fennel seeds
  • 1/2 teaspoon black peppercorns
  • 1/4 teaspoon asafoetida


  • 1/2 cup grated coconut
  • 1/2 tablespoon lemon juice
  • 1 teaspoon rock salt
  • 1 tablespoon jaggery

Green Ingredients

  • 1 cup chopped ridge gourd
  • 1/4 cup curry leaves
  • 1/2 cup chopped coriander leaves
  • 1/4 cup water


  1. Dry roast all the spices in a pot for 2 minutes.
  2. Add all the green ingredients, stir, and cover. Allow it to cook on a medium flame for 7 minutes.
  3. Blend the paste ingredients and the roasted mixture until smooth, and transfer to a bowl.
  4. Refrigerate for 30 minutes before serving.
