Veggie Ingredients
1 teaspoon finely chopped ginger
1 1/2 cups small-chopped carrot
1/2 cup small-chopped potato
1/2 cup small-chopped red bell pepper
2 1/2 cups water
Other Ingredients
1/4 teaspoon cinnamon powder
1/2 teaspoon black pepper powder
1/2 cup almond milk
3/4 teaspoon rock salt
Topping
2 tablespoons chopped mint
Preparation
Prepare 1/2 cup almond milk
Method
- Heat a pot and sauté the ginger for a minutes. Add all the remaining veggie ingredients, except the water, and roast for 3 minutes on medium flame.
- Add the water, cover and allow to cook for 20 minutes until soft.
- Switch off the stove and allow the vegetables to cool.
- Transfer the cooked veggies (along with the water) into a blender. Add the cinnamon and pepper powder, and blend until smooth.
- Transfer the blended mixture into a pot. Add the almond milk and cook for 5 minutes on medium flame.
- As soon as the soup starts boiling, switch off the stove. Add the rock salt and stir.
- Garnish with mint and serve warm.
