Spiced Carrot and Beetroot Kanji
Makes 8 cups
Ingredients
- 8 cups water
- 1 medium carrot, cut 2” lengthwise
- 1/2 medium beetroot, cut into 2 pieces
- 1 tablespoon mustard seeds, lightly crushed
- 2 green chilies, finely chopped
- 1/2 teaspoon turmeric powder
- 1/8 teaspoon asafoetida
- 1 teaspoon black salt
Method
- Combine the ingredients in a tall glass jar or a clay pot, and stir well.
- Cover the jar with a thin muslin cloth, and tie the cloth onto the jar with a thread.
- Place the bowl in a warm place, such as an empty oven, and allow the kaanji to ferment for 2-3 days. Stir it once a day.
- Strain out the vegetables (You can use them in salads) and your kaanji is ready. Serve immediately, or store in the fridge for up to a week.
