Spiced Carrot and Beetroot Kanji

Makes 8 cups

Ingredients

  • 8 cups water
  • 1 medium carrot, cut 2” lengthwise
  • 1/2 medium beetroot, cut into 2 pieces
  • 1 tablespoon mustard seeds, lightly crushed
  • 2 green chilies, finely chopped
  • 1/2 teaspoon turmeric powder
  • 1/8 teaspoon asafoetida
  • 1 teaspoon black salt

Method

  1. Combine the ingredients in a tall glass jar or a clay pot, and stir well.
  2. Cover the jar with a thin muslin cloth, and tie the cloth onto the jar with a thread.
  3. Place the bowl in a warm place, such as an empty oven, and allow the kaanji to ferment for 2-3 days. Stir it once a day.
  4. Strain out the vegetables (You can use them in salads) and your kaanji is ready. Serve immediately, or store in the fridge for up to a week.
