“Who said rainbows can’t hide secrets? This colorful salad is loaded with nutrients, and if you look closely, you might find a sneaky bottle gourd in there. Don’t worry, it still tastes epic! The sesame dressing ties all the deliciousness together.”
Ingredients
Til Dressing
- 1/4 cup white sesame seeds, roasted
- 1/2 cup chopped tomato
- 1/4 cup raisins, soaked
- 1 tablespoon lemon juice
- 1/2 small green chili
- 1/4 teaspoon roasted cumin powder
- 1/2 teaspoon rock salt
Salad Base
- 1 cup small bottle gourd
- 1 cup chopped green or red amaranth leaves (chaulai or laal saag)
- 1/2 cup small-chopped tomato
- 1/2 cup small-chopped capsicum
- 1/4 cup raisins
Topping
- 2 tablespoons sesame seeds, roasted
Soak in Advance
Soak 1/4 cup raisins in water for 1 hour.
Method
- Place all the til dressing ingredients into a blender and blend until smooth.
- Place all the salad base ingredients into a mixing bowl. Pour the dressing over and stir to combine everything.
- Top with roasted sesame seeds, and serve.
