Ingredients

  • 2/3 cup brown rice, soaked
  • 3 cups water
  • 1/4 teaspoon mustard seeds
  • 1 tablespoon curry leaves
  • 1/4 teaspoon asafoetida
  • 1/4 cup thickly grated beetroot
  • 3/4 teaspoon rock salt

Soak in Advance

Soak 2/3 cup brown rice in water for 3 hours.

Method

  1. Bring the water to a boil in a heat pot. Add the soaked brown rice, cover, and allow to cook for 25 minutes on medium flame.
  2. In another heated pot, dry roast the mustard seeds and curry leaves for 2 minutes. Add the asafoetida and beetroot, and stir for a minute.
  3. Add the cooked brown rice, and cook for 2 more minutes, stirring continuously.
  4. Switch off the stove, add the rock salt, and stir. Cover for 5 minutes, then serve with any curry sabzi.
