“For this recipe, we tossed some crunchy peanuts in with the bhindi for an extra burst of flavor. Plus, you don’t need any extra oil because the peanuts have their natural oils!”

Ingredients

  • 1 1/2 cups chopped ladyfingers (bhindi)

Spice

  • 1/4 teaspoon cumin seeds
  • 1/4 teaspoon mustard seeds
  • 15 curry leaves
  • 1/2 teaspoon finely chopped ginger
  • 1/4 teaspoon finely chopped green chili

Other Ingredients

  • 3/4 teaspoon coriander powder
  • 1/2 teaspoon roasted cumin powder
  • 1/2 teaspoon lemon juice
  • 1/4 cup chopped tomato
  • 1/4 teaspoon rock salt

Topping

  • 1 tablespoon chopped coriander
  • 2 tablespoons peanuts, roasted and crushed

Method

  1. Heat a pot, add the chopped ladies finger, and dry roast for a minute. Cover and allow to cook on a medium flame for 10 minutes, stirring regularly to prevent sticking.
  2. Heat a pan and dry roast all the spice ingredients for 2 minutes on low flame.
  3. Add the roasted spices and all the other ingredients for 2 minutes on low flame. except the tomato and rock salt, to the okra. Stir well.
  4. Cover and allow to cook for 5 minutes, stirring regularly.
  5. Switch off the stove and add the tomato and rock salt. Stir, and cover for 10 minutes.
  6. Add the toppings, and serve warm with chapati and chutney or raita.
