Ingredients
Mustard Dressing
- 1/4 cup cashews, soaked
- 2 tablespoons water
- 3/4 teaspoon mustard seeds
- 1 1/2 tablespoons jaggery powder
- 1 tablespoon lemon juice
- 1/2 teaspoon rock salt
Salad Base
- 1/4 teaspoons cumin seeds
- 2 cups grated cauliflower
- 1/4 cup finely chopped yellow bell pepper or green capsicum
- 1/4 cup finely chopped tomato
- 1/4 cup finely chopped cucumber
Topping
- 1/4 cup pomegranate seeds
- 2 tablespoons raisins
- 1/4 cup roasted and crushed walnuts
- 1 tablespoon chopped coriander
Soak in Advance
Soak 1/4 cup cashews in water for 6 hours.
Method
- Place all the mustard dressing ingredients into a blender and blend until smooth.
- Heat a pot, and roast the cumin seeds on a medium flame for a minute.
- Add the cauliflower to the pot, and roast for 5 minutes while stirring continuously.
- Transfer it to a mixing bowl, and set aside for 5 minutes to cool.
- Add the remaining salad base ingredients to the same bowl, along with the dressing, and combine everything.
- Add the toppings and serve.
