Beetroot Fusion Coconut Chutney with Crunchy Peanuts

Ingredients (Makes 1 cup)


  • 1/2 teaspoon mustard seeds
  • 1 tablespoon curry leaves
  • 1/2 cup grated beetroot


  • 1/2 cup grated coconut
  • 1/3 cup roasted peanuts
  • 1 small green chili
  • 1/4 teaspoon grated ginger
  • 1/2 teaspoon lemon juice
  • 3/4 teaspoon rock salt
  • 1/3 cup water


  1. Heat a pot and roast all the tadka ingredients for 2 minutes on medium flame.
  2. Place all the chutney ingredients into a blender and blend until smooth. Transfer into the pot with the tadka, and stir.
  3. Refrigerate for 30 minutes before serving.
