Beetroot Fusion Coconut Chutney with Crunchy Peanuts
Ingredients (Makes 1 cup)
Tadka
- 1/2 teaspoon mustard seeds
- 1 tablespoon curry leaves
- 1/2 cup grated beetroot
Chutney
- 1/2 cup grated coconut
- 1/3 cup roasted peanuts
- 1 small green chili
- 1/4 teaspoon grated ginger
- 1/2 teaspoon lemon juice
- 3/4 teaspoon rock salt
- 1/3 cup water
Method
- Heat a pot and roast all the tadka ingredients for 2 minutes on medium flame.
- Place all the chutney ingredients into a blender and blend until smooth. Transfer into the pot with the tadka, and stir.
- Refrigerate for 30 minutes before serving.
