Ingredients

3 tsp ragi flour (finger millet flour)

1 glass boiling water (200–250 ml)

A pinch of black salt

½–1 tsp yellow mustard powder (or black mustard powder)

(Optional): roasted cumin powder, chopped green chili, hing, lemon juice, onion, or khatmir (coriander leaves)
Method
Mix:
Make a smooth paste of ragi flour using a little water.
In a mitti (earthen) vessel, slowly pour boiling water into the paste while stirring continuously to avoid lumps.
Cool & Ferment:
Allow the mixture to cool down to room temperature.
You may form small batter balls if desired.
Cover with a muslin cloth and keep aside in a warm place for 8–10 hours.
When a mild sour aroma develops, fermentation is complete — your natural probiotics are ready!
Flavor & Serve:
Add black salt and mustard powder (yellow or black) to taste.
For extra flavor and digestive benefits, mix in roasted cumin powder, hing, green chili, lemon juice, onion, or khatmir.

Method
Soak & Boil:
Soak the millet for 4 hours.
Boil it in hot water until soft, then add a little cool water and leave it overnight to ferment naturally.

2 liters boiled and cooled water

6–8 fresh amlas (Indian gooseberries) – lightly crushed or slit

1 inch kachi haldi (raw turmeric) – sliced

Preparation Steps:
Boil & Cool Water:
Bring 2 liters of water to a boil and allow it to cool completely to room temperature.
Prep Ingredients:
Wash amla, ginger, and turmeric thoroughly. Slightly crush or slit amlas (remove seeds if you wish). Slice haldi and adrak thinly.
Combine in Jar:
Add all ingredients into a large glass or ceramic jar (avoid metal).
Add Salts & Spices:
Mix in rock salt, black salt, and optional mustard powder and green chili. Stir well using a wooden spoon.
Ferment Naturally:
Cover the jar with a muslin cloth or loose lid. Keep it in a warm, shaded place for 3 days (stir once daily).
Check Fermentation:
After 3 days, the liquid will turn slightly cloudy, tangy, and aromatic — this means it’s fermented.
Strain & Store:
