Nutrient-Packed Vegetable Delight Soup

INGREDIENTS
Vegetables
• ¼ teaspoon grated ginger
• 1 cup sweet corn
• ¼ cup small-chopped carrot
• ¼ cup small-chopped capsicum
• ¼ cup small-chopped green beans
• ¼ cup small-chopped potato
Other Ingredients
• 3 cups water
• 1 teaspoon jaggery powder (optional)
• ½ teaspoon black pepper powder
• 2 teaspoons lemon juice
• 1 teaspoon rock salt
Garnishing
• 2 tablespoons chopped coriander
METHOD
1. Heat a pot. Add the grated ginger and roast for a few seconds. Add all the vegetables and roast for 2 minutes, until slightly cooked.
2. Pour 3 cups of water into the pot, and stir. Cover, and let it cook for 15 minutes on medium flame until cooked.
3. Take out ¾ cup of the cooked vegetable mixture. Transfer it to a blender, and blend until smooth.
4. Transfer the blended mixture back into the same pot, and stir well. Let it boil for 5 more minutes until the soup thickens a little.
5. Switch off the stove. Add all the remaining ingredients, and stir.
6. Serve warm, and enjoy.
