To Make Beetroot Carrot Soup Carrot
– 4 Nos Beetroot
– 1 No. Unsalted Butter
– 6 Cubes A Piece Of Cinnamon Bay Leaf
– 2 Nos Onion
– 2 Nos Garlic
– 8 Cloves Salt
– 1 Tsp Pepper
– 1 Tsp Water Olive Oil
Method:
1. Peel off the skin for carrots and beetroot. Chop them into small pieces and put them in separate bowls.
2. Take a wide pot and add oil. Add bay leaves and cinnamon.
3. Add the chopped onions and saute for 2 mins.
4. Add garlic cloves and saute for another 2 mins.
5. Add in the chopped carrot and chopped beetroot.
6. Now put in the salt and pepper. Mix it all well and cook for 2-3 mins.
7. Pour water in the pan until all the vegetables are completely immersed.
8. Cover the pan with a lid and cook the veggies for about 20 mins on a medium flame.
9. After 20 mins, turn off the stove and cool down the vegetables completely.
10. Once the vegetables are cooled down, remove the bay leaves and cinnamon.
11. Transfer the cooled down vegetables to a mixer jar and grind it into a fine puree by adding a little water.
12. Now pour this puree back into the pan in which the vegetables are cooked and add water to it to dilute the soup.
13. Add in the fresh basil leaves or coriander leaves and mix it all well.
14. Check for seasoning, add salt and pepper if required.
15. Cover the pan with a lid and cook the soup for 5 mins on a medium low flame.
