Minty Carrot Ginger Soup

Ingredients
- 1/2 tsp oil
- 1 clove garlic, minced
- 1 inch ginger, minced
- 1/2 onion, sliced
- 2 carrots, roughly chopped
- Pinch of salt
- 2 cups water
- Few mint leaves
- 1/2 tsp crushed pepper
Instructions
- Prepare the Ingredients: Mince the garlic and ginger, slice the onion, and roughly chop the carrots.
- Sauté the Aromatics:
- Heat 1/2 tsp of oil in a pressure cooker over medium heat.
- Add the minced garlic and ginger. Sauté for a minute until fragrant.
- Add the sliced onion and sauté for another minute until it becomes translucent.
- Cook the Carrots:
- Add the chopped carrots and a pinch of salt to the pressure cooker.
- Pour in 2 cups of water and add a few mint leaves.
- Stir everything well, then cover the pressure cooker and cook for 2 whistles or until the carrots are fully cooked.
- Blend the Soup:
- Once the pressure releases, open the cooker lid and remove the mint leaves.
- Let the mixture cool completely.
- Transfer the cooled mixture to a blender and blend until smooth.
- Reheat and Adjust Consistency:
- Pour the blended carrot paste back into the pressure cooker or a large pot.
- Add the leftover water from the cooked carrots to adjust the soup’s consistency. Mix well.
- Bring the soup to a boil over medium heat and let it simmer for about 2 minutes, or until it thickens to your liking.
- Season and Serve:
- Add 1/2 tsp of crushed pepper, or adjust to taste.
- Stir well and serve hot.
