Berry Avocado Smoothie with Seed Topping
Smoothie Ingredients:
- 1/2 ripe avocado
- 1/2 cup mixed berries (such as strawberries, blueberries, raspberries)
- 1/2 cup spinach leaves
- 1/2 cup coconut water (unsweetened)
- 1 tablespoon lemon juice
- 1 teaspoon honey (optional)
- Ice cubes (optional)
Topping:
- 1 tablespoon mixed seeds (such as chia seeds, pumpkin seeds, sunflower seeds)
- 1 tablespoon sliced almonds
- 1 teaspoon unsweetened shredded coconut
Instructions:
- In a blender, combine the avocado, mixed berries, spinach leaves, coconut water, lemon juice, honey (if using), and ice cubes (if desired). Blend until smooth.
- In a dry skillet over medium heat, toast the mixed seeds, sliced almonds, and shredded coconut until lightly toasted, stirring frequently.
- Pour the smoothie into a bowl and sprinkle the toasted seed topping over the top.
- Serve immediately and enjoy!
