Vegetable Pasta Marinara


100g pasta or spaghetti
4 mushrooms
1 tomato
2 florets broccoli or 1/2 courgette
1/4 red pepper
1/4 onion
1/2 vegetable or tomato stock cube
3 tbsp tomato purée
1 tbsp agave syrup or honey
Black pepper & Italian herbs to taste – oregano, basil


Time: 15 minutes

Bring the pasta to a boil in a pan of water and simmer for 6
minutes. Chop the vegetables and add to the saucepan. Simmer
for a further 6 minutes. Rinse and drain, and return to the saucepan
and over the heat. Add in the remaining ingredients and mix well
for 1 minute. Serve.

Lycopene in the tomatoes protects against DNA damage to your
cells and is good at combatting asthma.
