Sweet & Spicy Cashew Mayo
Recipe: Cashew-Mustard Mayonnaise
Ingredients:
- 20 soaked cashews (soaked for 4 hours)
- 2 teaspoons lemon juice
- ½ teaspoon rock salt
- ⅛ teaspoon black mustard seeds
- ⅛ teaspoon black pepper powder
- 1 tablespoon jaggery powder
- 2 tablespoons water (adjust for consistency)
Method:
- Prepare the ingredients: Drain and rinse the soaked cashews.
- Blend the mixture: In a blender, add the soaked cashews, lemon juice, rock salt, mustard seeds, black pepper powder, jaggery powder, and water.
- Blend until smooth: Blend all ingredients on high speed until the mixture is smooth and creamy. Add more water if needed to reach your preferred mayonnaise consistency.
- Taste and adjust: Adjust the salt, sweetness (jaggery), or acidity (lemon juice) based on taste preferences.
- Store: Transfer the mayonnaise to an airtight container and store in the refrigerator for up to 5 days.
