Sweet & Spicy Cashew Mayo

Recipe: Cashew-Mustard Mayonnaise

Ingredients:

  • 20 soaked cashews (soaked for 4 hours)
  • 2 teaspoons lemon juice
  • ½ teaspoon rock salt
  • ⅛ teaspoon black mustard seeds
  • ⅛ teaspoon black pepper powder
  • 1 tablespoon jaggery powder
  • 2 tablespoons water (adjust for consistency)

Method:

  1. Prepare the ingredients: Drain and rinse the soaked cashews.
  2. Blend the mixture: In a blender, add the soaked cashews, lemon juice, rock salt, mustard seeds, black pepper powder, jaggery powder, and water.
  3. Blend until smooth: Blend all ingredients on high speed until the mixture is smooth and creamy. Add more water if needed to reach your preferred mayonnaise consistency.
  4. Taste and adjust: Adjust the salt, sweetness (jaggery), or acidity (lemon juice) based on taste preferences.
  5. Store: Transfer the mayonnaise to an airtight container and store in the refrigerator for up to 5 days.
