Nutrient-Rich Ridge Bliss Salad
Who says (turai) ridge gourd can’t be tasty? With the zesty almond dressing, juicy pomegranate seeds, and a sprinkle of coconut, this dish is a party in your mouth that will leave you wanting more!”
Ingredients
Dressing
- 1/4 cup chopped ridge gourd
- 10 almonds, roasted
- 1 tablespoon lemon juice
- 1 teaspoon jaggery powder
- 1/2 teaspoon lemon zest (finely grate the top-most layer of the peel of a fresh lemon)
- 1/4 teaspoon black pepper powder
- 1/2 teaspoon rock salt
Salad Base
- 2 cups round sliced turai (ridge gourd)
- 1 1/2 cups finely chopped coriander
- 1 cup thickly grated coconut
- 1/2 cup pomegranate seeds
Topping
- 2 tablespoons almonds, roasted and chopped
Method
- Place all the dressing ingredients into a blender and blend until smooth.
- Place all the salad base ingredients into a large mixing bowl. Pour the dressing over, and massage to combine everything.
- Top with roasted almonds, and serve.
