Ingredients

Dressing

  • 1/4 cup chopped ridge gourd
  • 10 almonds, roasted
  • 1 tablespoon lemon juice
  • 1 teaspoon jaggery powder
  • 1/2 teaspoon lemon zest (finely grate the top-most layer of the peel of a fresh lemon)
  • 1/4 teaspoon black pepper powder
  • 1/2 teaspoon rock salt

Salad Base

  • 2 cups round sliced turai (ridge gourd)
  • 1 1/2 cups finely chopped coriander
  • 1 cup thickly grated coconut
  • 1/2 cup pomegranate seeds

Topping

  • 2 tablespoons almonds, roasted and chopped

Method

  1. Place all the dressing ingredients into a blender and blend until smooth.
  2. Place all the salad base ingredients into a large mixing bowl. Pour the dressing over, and massage to combine everything.
  3. Top with roasted almonds, and serve.
