Saffron-Spiced Celebration Bites (Gulab Jamun Healthy version)

INGREDIENTS

Balls
. 1 cup boiled and mashed sweet potato
• 1⁄2 cup oat flour
• % cup blended cashews
• 2 tablespoons jaggery powder pinch of rock salt

Jaggery Syrup

• 1 cup jaggery powder

• 1 1⁄2 cups water
• 1⁄2 teaspoon cardamom powder
• 12 saffron strands, soaked
• pinch of rock salt

Topping

• 1 teaspoon pistachios, roasted and chopped
• 1 teaspoon almonds, roasted and chopped
• 1 teaspoon rose petals

PREPARATION

• Boil 3 sweet potatoes and mash them.

• Soak 12 saffron strands in 1⁄2 teaspoon water for 10 minutes.

METHOD

1. Preheat the oven to 200°C for 10 minutes.
2. Place all the ball ingredients in a mixing bowl, and combine with your hands to form a dough.
3. Divide the dough into 14 balls. Line a baking tray with parchment paper, place the balls on it, and bake at 200°C for 12 minutes until golden brown.
4. Heat a pot, and add the jaggery and water. Stir and allow to cook for 12 minutes on medium flame.
5. Switch off the stove, and add the cardamom powder, saffron strands (and their soaking water), and rock salt. Stir well.
6. Place the baked balls in the jaggery syrup, and cook for another 10 minutes on medium flame. Stir regularly to evenly coat the balls in the syrup.
7. Switch off the stove, add the toppings, and serve.
