🌿 Yellow Coconut Curry

A nourishing, mildly spiced coconut-based curry perfect with brown rice!


🔸 Ingredients

👉 To Roast:

  • 1/4 tsp cumin seeds

  • 1/4 tsp fenugreek seeds

  • 1/4 tsp mustard seeds

  • 20 curry leaves

👉 Vegetables:

  • 1 cup potato, chopped

  • 1 cup carrot, chopped

  • 1 cup green beans, chopped

  • 3/4 tsp turmeric powder

  • 1 cup water

👉 Coconut Gravy:

  • 1 1/2 cups thick coconut milk

  • 1/4 tsp black pepper powder

  • 1 small green chili

  • 1/2 tsp jaggery powder

  • 1 1/4 tsp rock salt


👩‍🍳 Method

Step 1: Roast the Spices

  1. Heat a mud pot or a thick-bottomed pan.

  2. Dry roast cumin seeds, fenugreek seeds, mustard seeds, and curry leaves for 2–3 minutes until aromatic.

Step 2: Cook the Vegetables

  1. Add chopped potatoes, carrots, green beans, turmeric powder, and water to the roasted spices.

  2. Cover with a lid and boil for about 15 minutes, or until vegetables are soft.

Step 3: Prepare the Coconut Gravy

  1. While vegetables are cooking, grind together:

    • Coconut milk

    • Black pepper powder

    • Green chili

    • Jaggery powder
      (Note: Salt will be added later when mixing with veggies)

Step 4: Combine & Finish

  1. Once vegetables are cooked, turn off the heat.

  2. Add the prepared coconut gravy and rock salt to the pot.

  3. Cover and let it sit for 5 minutes so the flavors blend beautifully.

Serve hot with brown rice, red rice, or even quinoa for a wholesome, gut-friendly meal.
