Creamy Cashew Mayo Salad

INGREDIENTS
Mayonnaise Dressing
• 20 soaked cashews
• 2 teaspoons lemon juice
• ½ teaspoon rock salt
• ⅛ teaspoon black mustard seeds
• ⅛ teaspoon black pepper powder
• 1 tablespoon jaggery powder
• 2 tablespoons water
Salad Base
• 1 cup chopped lettuce
• ½ cup small-chopped cucumber
• ½ cup sweet corn, steamed
• ⅓ cup small-chopped yellow bell pepper
• ⅓ cup small-chopped red bell pepper
• ¼ cup small-chopped tomatoes
• ¼ cup pomegranate
• 3 tablespoons chopped raisins
Topping
• ⅛ teaspoon black sesame seeds
• ¼ teaspoon chopped raisins
PREPARATION
Soak 20 cashews in water for 6 hours.
Method
1.For the mayonnaise dressing, place
all the mayonnaise ingredients in a
blender and blend until smooth.
2. Chill the mayonnaise in the freezer
for 15 minutes.
3. Place all the salad base ingredients
in a big bowl and pour the
mayonnaise over it. Mix well.
4. Serve salad in lettuce cups and
garnish with the black sesame
seeds and raisins.
